  1. Braciola di Pollo = stuffed, de-boned chicken.  Looks delicious.  Probably a lot easier to do with skin on chicken breasts, although the whole chicken would probably be worth it.
  2. Crostini Napolitani:  my interest is the anchovies and seasoned ricotta idea.

  1. Pan-fried risotto pancakes: from leftover risotto, 2″ sphere formed with wet hands, fried 4 minutes a side, let rest in pan for minute for structure.
  2. Fish and eggs breakfast: broil whitefish with butter and seasoning (salt and pepper, or capers, lemongrass, and parsley, or…). With a few minutes left in the broiling, crack two eggs into the broiler pan to have fish and sunny side up eggs when done.
  3. Sorta Saltimbocca: parmesan, prosciutto, and chicken breast: On a sheet of saran wrap, 1 chicken breast, salt and peppered. Cover generously with parmesan, and a layer of prosciutto (or other cured meat). Wrap and pound flat with a heavy pan. Pan fry in a little oil for a few minutes until pig is crispy and chicken is cooked. Once the ingredients are purchased, this takes about as long to make as reheating leftovers.
